What you need:

  • 1/2 kilogram ground chuck
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese
  • 1/2 cup bread crumbs
  • 1/2 cup finely diced onion
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

In a large mixing bowl, combine thoroughly the ground chuck, egg, garlic, Parmesan, bread crumbs, onion, basil and parsley using clean hands. Season with Italian seasoning, salt and pepper. Form into 1-inch meatballs then arrange on a grill tray. Cover and refrigerate for at least 1 hour. When ready, brush the meatballs with olive oil and cook on a pre-heated grill over medium high heat, lid down, until cooked through (about 12 to 15 minutes). Mix the bread and milk in a bowl. Squeeze milk out of the bread and discard remaining milk. Set aside. Heat the olive oil in a pan over medium heat and cook bacon, garlic and onion until bacon is cooked through and vegetables are tender. Add the mixture to the bowl with the bread and allow to cool. Add the ground chuck, ground pork, Parmesan, parsley, salt, pepper, basil and oregano. Oil your hands with olive oil and for the mixture into 1 1/2-inch meatballs. Arrange meatballs on a grill grate and cook on a pre-heated grill over medium high heat until cooked through, about 25 to 30 minutes. How to Make Beef Stock at Home

Virtually any ingredients ranging from vegetables to even fruits to meat and poultry or as mixture of these can be used.

A very important ingredient in soup is the stock and making your own at home is worth the time and effort. For many people, the idea of making beef stock or any kind of stock at sounds daunting, but it need not be. It is a good way to use the fresh vegetables from your garden.Stock cubes save time and are convenient to use but should be avoided as much as possible because they tend to contain a lot of salt. Here is a simple recipe for beef stock which you can make ahead of time and store in the freezer for up to forty five days. Do note that it can only be stored in the freezer as it deteriorates quickly.

Utensils: large saucepan, slotted spoon, colander.

Ingredients: one kilogram marrow and shin bones, one large onion, two large carrots, one bouquet garni, five black peppercorns.

Procedure: ask your butcher to chop the bones into small pieces that you can handle.

Wash the bones thoroughly and place them in a large saucepan.

Add about two quarts of water to cover the bones

Add half a tablespoon of salt.

Bring to the boil and skim off any scum with the slotted spoon.

Simmer the Stock gently for two hours keeping the saucepan half covered. Be sure to skim occasionally during this time.

Peel and quarter the onion, peel and chop the carrots.

Add the onion, carrots, bouquet garni and peppercorns. Then continue simmering for another two hours adding more water if the level drops below the level of the bones.

Remove the stock from heat and strain with a colander.

Allow it to cool them skim off fat with absorbent kitchen paper. Use immediately or store it in the freezer.

This beef stock can be used when preparing vegetable soups, meats, casseroles, stews and broths.

How to Make Stuffed Bell Peppers

Stuffed bell peppers are a southern treat that goes back a few decades. There are many varieties of stuffed bell peppers. In this recipe, I am going to describe how to make the traditional stuffed bell peppers. There are some key ingredients in this recipe that must be done right. The shrimp, crabmeat, and crab boil are all seasonings that can be googled. It’s something about fresh Louisiana gulf shrimp that makes food taste a lot better. The tasso and ham cajun smoked is another added bonus. I also ensure that I add the Tony chachere’s cajun seasonings. If you want this to be a meal to remember, please make sure that these key ingredients are sacrificed. Ok, let’s begin.


5 bell peppers (Green or Yellow)
1 Large yellow onion
1 stalk of celery
1 tablespoon of olive oil
1 1/2 lbs ground beef or ground turkey
1 lb Small shrimp (91-130 count)
8 oz or more lump crab meat
1/2 cup bread crumbs. I prefer to use Italian bread crumbs.
2/3 cups of chicken broth
Chopped tasso or ham (optional)
1 cup shredded parmesan
cajun seasoning
1 tsb liquid crab boil. I prefer to use Zatarain’s.
salt and pepper
onion and garlic powders


Diced one pepper, onion, and celery finely; put aside in a cool location
Bring a pot of salted water to a boil
Add crab boil
Slice remaining peppers in half and remove seeds
Add peppers to boiling water
Boil for 5-7 mins or until they soften just a bit.
Drain and allow them to cool

Preheat oven to 360 degrees F
Season and brown ground meat. Don’t over cook ground meat. Remember the oven will do the rest.
Drain and set aside in a bowl

Using the same skillet, add 1 tablespoon of olive oil

Saute veggies until the have a translucent look to them.
Add shrimp
Then Season lightly
Saute until shrimp start to blush. Be careful not to over cook
Add shrimp and veggies to the ground meat
Then the breadcrumbs and broth (ham and tasso if you’re using it)
Mix and taste
Adjust seasoning if needed
Add in cheese. Try not to over power the Bell Peppers with cheese.
Gently fold in crab meat
Stuff peppers and place into a greased baking dish
Bake for 15-20 mins covered to trap moisture.
Garnish with grated parmesan cheese if you’d like.
